Ingredients

Quantity Ingredient
500g aubergines
6 tablespoons olive oil
2 garlic cloves, thinly sliced
1/2 tablespoon dried oregano
1/2 lemon, juiced
sea salt

Method

  1. Thickly slice 500g aubergines and chop into 2cm pieces. Heat 6 tablespoons olive oil in a large frying pan over a medium heat, then add 2 thinly sliced garlic cloves, 1/2 tablespoon dried oregano and the aubergine. Fry for about 8–10 minutes, turning frequently, until softened and tender. Transfer to a bowl, add the juice of 1/2 lemon, season with sea salt and serve.
