Ingredients

Quantity Ingredient
4 large carrots
3 oranges
2 teaspoons ground cumin
150ml extra-virgin olive oil
sea salt
freshly ground black pepper
mint leaves

Method

  1. Peel 4 large carrots, then grate and transfer to a bowl. Add the juice of 3 oranges, 2 teaspoons ground cumin and 150ml extra-virgin olive oil. Toss to combine and season generously with sea salt and freshly ground black pepper, transfer to a serving bowl and sprinkle with shredded mint leaves.
