Potato & Olive Salad

Ingredients

Quantity Ingredient
450g potatoes
200g olives
4 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
sea salt
freshly ground black pepper

Method

  1. Peel 450g potatoes, then roughly chop and boil in salted water until tender. Drain and transfer to a bowl, adding 200g olives, 4 tablespoons extra-virgin olive oil and 2 tablespoons red wine vinegar. Season with sea salt and freshly ground black pepper, toss to combine and transfer to a serving bowl.
