Sardines on toast with cherry tomato & preserved lemon salad

Ingredients

Quantity Ingredient
24 cherry tomatoes
1/2 rind * preserved lemons [rid:1530]
1 tablespoon capers
4 tablespoons extra-virgin olive oil
1/2 lemon, juiced
1 arab-style flatbreads
125g tinned sardines
sea salt
freshly ground black pepper

Method

  1. Place 24 cherry tomatoes, halved, the rind of 1/2 preserved lemon cut into strips, 1 tablespoon capers, drained, 4 tablespoons extra-virgin olive oil and the juice of 1/2 lemon in a bowl. Season generously with sea salt and freshly ground black pepper and mix until well combined.
  2. To assemble, split open 1 Arab-style flatbread, using a sharp knife, and lightly toast. Divide 125g tinned sardines, drained, between the two halves of flatbread, then top each with the tomato salad and serve.
