Sour cherry sorbet

You can find all sorts of vişne (sour cherry) products in Turkish supermarkets – cherry juice, jams and spoon sweets and even the fresh cherries in season. This utilises sour cherry spoon sweets, cherry juice and cherry sorbet.

Ingredients

1kg fresh sour cherries or other cherries, washed and stoned
100g granulated sugar
1/2 lemon, juiced
12 sour cherry spoon sweets, including some of their syrup

ice-cube tray, for making round ice cubes (optional)
ice cream machine

Method

  1. Blend the fresh cherries to a purée in a blender. Place a fine sieve over a bowl, transfer the cherries to the sieve and crush them to squeeze the juice out. Discard the cherries and measure out 400ml of the juice in a large jug. Freeze any surplus juice in an ice-cube tray to make round ice cubes, if you like.
  2. Combine the sugar and 200ml cold water in a saucepan over low heat and simmer until the sugar has dissolved. Add the lemon juice and simmer for 10 minutes, or until the syrup begins to reduce. Leave to cool for 10 minutes. Mix the syrup and cherry juice and refrigerate for 30 minutes, then transfer to an ice cream machine and freeze according to the manufacturer’s instructions.
  3. Either keep it frozen until ready to use, or scoop it immediately into bowls and garnish it with some round sour cherry ice cubes, and sour cherry spoon sweets and their syrup.
