Turkish bread and apple pudding

Authentic Turkish bread and butter pudding is an extremely sweet dessert in which the bread is soaked in syrup and topped with loads of whipped cream. Mine’s a much tamer affair more affable to Western tastes but with the addition of some kaymak for an added Ottoman influence.

Ingredients

Quantity Ingredient
4 tablespoons large currants
1 stale ciabatta-style loaf, sliced
4 apples, cored and thinly sliced

Syrup

1 orange, juiced
150g granulated sugar
1 cinnamon stick
1/2 teaspoon vanilla extract
1 tablespoon whole cloves
1 tablespoon allspice berries

To serve

ground cinnamon
kaymak or clotted cream

Method

  1. Preheat the oven to 180˚C. Soak the currants in a bowl of warm water for 20 minutes.
  2. For the syrup, put 300ml cold water, the orange juice and sugar in a saucepan over medium heat and bring to the boil. Add the cinnamon stick, vanilla extract, cloves and allspice berries. Reduce the heat and simmer for 20 minutes. Leave it to cool for 5–10 minutes. Drain the syrup through a fine sieve and into a jug, discarding the cinnamon stick, cloves and allspice berries.
  3. Place the bread and apple slices in alternating layers in the ovenproof dishes. Scatter the drained currants into the dishes and pour over the syrup. Bake the puddings in the preheated oven for 30–40 minutes until the apples are cooked and the bread is starting to go golden brown.
  4. Serve immediately, sprinkled with cinnamon and with a generous spoonful of kaymak or clotted cream.
