I know this isn’t Indian in origin, but it is so delicious I couldn’t resist putting it in the book. Granola is so easy to make that, once you’ve done it, you will never buy it again. Here it adds a lovely crunch. I like it with pistachios, almonds, cashews, pumpkin and sunflower seeds, but use your own favourite nuts and seeds. I haven’t added dried fruit to it as there is some in the compote, but you can add raisins, dried cherries, dried blueberries or any other you like, with the coconut.

For the granola

Ingredients

Quantity Ingredient
160g old-fashioned rolled oats
80g mixed nuts and seeds
1/2 teaspoon ground cinnamon
good pinch salt
3/4 teaspoon vanilla essence
1 1/2 tablespoons vegetable oil
55-60ml natural maple syrup
1 1/2 tablespoons honey
20g coconut flakes

For the rest

Quantity Ingredient
400g blackberries, washed
4-5 tablespoons violet syrup, or to taste
large handful dried blueberries or raisins
squeeze orange juice, (if needed)
greek yogurt, to serve

Method

  1. To make the granola, preheat the oven to 140°C. Mix the oats, nuts and seeds, cinnamon and salt in a baking tray. Make a well in the middle, pour in all the wet ingredients and mix well. Bake for 40 minutes, stirring every eight to nine minutes. Add the coconut when there are five minutes to go. Take out of the oven once golden; it will crisp up as it cools. Once cold, store in an airtight container.
  2. Place the blackberries in a saucepan with a good splash of water and heat until they start to soften. Add the syrup and dried fruit and cook for another minute, then take off the heat. Add another splash of water if the fruit looks a little dry. Taste and balance the flavours, adding more syrup or a squeeze of orange juice to balance the sweetness. Serve the compote hot or cold with Greek yogurt and the granola.
