Sweet and savoury mint lassi

This traditional lassi is very popular in the northern region of Punjab, where field workers would replenish themselves with both salt and sugar while cooling their bodies with mint and cumin seeds.

Ingredients

Quantity Ingredient
720g yogurt
8 teaspoons caster sugar, or to taste
pinch salt
1 1/3-2 teaspoons roasted ground cumin
ice, crushed or shaved, to serve
8 tablespoons mint leaves, shredded, to taste
or 8 tablespoons dried mint, crumbled, to taste

Method

  1. Blend together most of the yogurt with 480 ml of water, the sugar, salt, cumin and half the mint. (You may need to do this in two batches, to avoid overloading the blender and splattering the kitchen.)
  2. Stir in the remaining mint, taste and adjust the sweetness and yogurt. Chill, then serve in glasses with the ice.
