Based on the flavours the Moghuls loved: rose water, fruits and nuts. it’s a great, fruity accompaniment to an Indian meal.

Method

  1. Cut a Pink Lady apple into 1 cm dice (leave the skin on); you’ll need 140 g of diced apple. Halve 100 g of white grapes, too. Put the apples and grapes in a bowl and mix in 25 g each of raisins and pistachios and 300 g of yogurt.
  2. Season with ½ teaspoon of ground cardamom, 2½–3 teaspoons of caster sugar and up to 1½ teaspoons of rose essence or rose water. (Be careful with the latter, adding just drops at a time before mixing and tasting, as they can vary in strength.) Serve, sprinkled with more pistachios if you like.
