A chopped salad served with many Indian meals, this is crunchy, fresh and delicious. It’s a case of simply chopping everything finely and mixing it all together.

Method

  1. You need 2 large-ish ripe tomatoes, 200 g cucumber, 4 radishes, ½ red onion and a large handful of coriander leaves. To this chopped mixture, add 1 tablespoons of extra virgin olive oil, 2 tablespoons of lemon juice, salt, freshly ground pepper, 1 teaspoon of roasted ground cumin and 1 tablespoon of good-quality dried mint (or fresh shredded mint, if you prefer). Add 1 small green chilli, deseeded and finely chopped, if you’d like more heat. Taste, adjust the seasoning and serve.
