Method

  1. Bring 200 g of Puy lentils to the boil and cook until just tender, 20–25 minutes. Drain well. Add 1 tablespoon of extra virgin olive oil, a fistful of finely chopped coriander, 2½ teaspoons of roasted ground cumin and 2½ tablespoons of lemon juice, season and serve.
