Herb and lemon paneer salad

This is a fresh and filling main course salad. Home-made paneer is tender, and easy and really satisfying to make (all you need is milk, lemon juice or yogurt, a saucepan and a sieve). If you don’t want to make it, you can use buffalo mozzarella, feta, or, if you have store-bought paneer, put it in just-boiled water for 10 minutes to help soften it before using.

For the dressing

Ingredients

Quantity Ingredient
4 tablespoons extra virgin olive oil
1 small garlic clove, grated
2 tablespoons lemon juice
1/4 teaspoon chaat masala
handful mixed soft herbs, such as mint, dill, coriander, parsley, chives
1/4 red chilli, finely chopped
1 tablespoon creme fraiche, (optional, but brings it all together)
1 rounded teaspoon dijon mustard
good pinch caster sugar

For the salad

Quantity Ingredient
200g Home-made paneer, sliced horizonally into thin shards or into cubes
100g cucumber, cut into long batons
100g radishes, thinly sliced
1/4 red onion, sliced
2 handfuls baby salad leaves
small handful honey-roast cashew nuts
1 small avocado, sliced

Method

  1. Blend together all the ingredients for the dressing until smooth and lightly emulsified. (I use a hand-held blender for this.)
  2. Toss the dressing with the paneer, cucumber, radishes and onion and leave for five minutes or so. Toss in the leaves and nuts before serving with the avocado slices.
