The technique to achieve perfect, fluffy rice is actually really easy. This is how we have always made it in my family.

Basmati rice is completely essential. No other rice has that wonderfully intense aroma, and the texture is also vastly superior to other long-grain rices. With my recipes, you will always get perfect stodge-free rice without fuss. So never let your kitchen be without a packet.

Ingredients

70-80g good-quality basmati rice, per person

Method

  1. Wash the rice well in several changes of water: I place it in a saucepan and pour over water. Swirl well with your fingers to dislodge the starch on the grains and pour off. Repeat until the water runs clear. Cover with at least 7.5 cm of fresh water.
  2. Bring to a boil and bubble (as you would pasta) for seven to eight minutes. Try a grain, it should be ready; if not cook for another minute and check again. Drain, then return the rice to the pan and the heat to dry off excess water for one minute. Turn off the heat, cover and allow to steam for eight to 10 minutes.
