Southern carrot and peanut raita

An Indian west coast-style raita that is nutty, creamy, crunchy and lightly sweetened.

Ingredients

Quantity Ingredient
2 large carrots, finely sliced or coarsely grated, water squeezed out
400g plain yogurt
freshly ground black pepper
1 1/2 teaspoons caster sugar, or to taste
3 tablespoons coriander leaves, chopped
20g roasted peanuts, lightly crushed
1 teaspoon olive oil
3/4 teaspoon mustard seeds
6-7 fresh curry leaves
salt

Method

  1. Mix the carrots, yogurt, salt, pepper, sugar, half the coriander and all the peanuts.
  2. Heat the oil in a small saucepan, allowing the liquid to pool on one side. Add the mustard seeds and, when the popping starts to die down, add the curry leaves and cook for another 10 seconds or so. Stir into the yogurt and serve garnished with the remaining coriander.
