One of my summertime favourites. Indians use a lot of floral essences in their desserts and, having discovered this violet syrup, I find myself using it often. But you can substitute 1–2 teaspoons of rose essence mixed with icing sugar to taste, if you prefer a rose flavour. For the berries, I like to use sliced strawberries, raspberries and blueberries during the summer, then blackberries later in the year. Blackberry and violet is an amazing flavour combination. If you want to lighten the taste slightly, try adding 2 tablespoons of Greek yogurt to the cream mixture.

Ingredients

450g mixed berries
2 teaspoons lemon juice, to taste
4-5 tablespoons violet syrup, to taste
350ml double cream, chilled
1 large star anise, ground
or 1 teaspoon ground star anise
2 tablespoons greek yogurt, (optional)
2 tablespoons dried sour cherries, (optional)
80g meringue, broken into medium-sized pieces
sprinkle flaked almonds, lightly toasted

Method

  1. Blend together one-third of the berries with the lemon juice and violet syrup to taste; you’ll need to balance the amounts of sharp lemon juice and sweet syrup according to the tartness of the berries and the strength of the syrup. If you are going to be adding yogurt or sour cherries, remember that both of these will make the mixture more tart.
  2. Lightly whip the cream so that it just holds its shape but is billowing and soft, then stir in the star anise, adding the yogurt and sour cherries if you want.
  3. When you are ready to serve, place the meringues in a lage mixing bowl, top with the whole berries and the spiced cream and gently fold them all together. Drizzle over the scented fruit purée and fold once; it should be rippled rather than even. Spoon into a serving dish or individual glasses, top with the almonds and serve.
