These versatile pancakes are wonderful breakfast or brunch fare and take minutes to cook from start to finish. They are egg-free so are good for vegetarians, and light and fluffy but with the slight crunch of cornmeal which is drying and therefore a better grain for kapha than wheat. You can also add oats instead of the cornmeal for vata or pitta.

Ingredients

2 teaspoons butter
50g plain flour
50g cornmeal
1 3/4 tablespoons raw cane sugar
1 teaspoon baking powder
1/2 teaspoon lemon zest
1 rounded tablespoon dried blueberries or raisins
130-135ml buttermilk
1 teaspoon lemon juice
maple syrup, to drizzle (vata and pitta)
or honey, to drizzle (kapha)

Method

  1. Melt the butter in a pancake pan or non-stick frying pan.
  2. In a bowl, whisk together all the dried ingredients. Make a well in the middle and pour in the buttermilk, lemon juice and the melted butter. Whisk together from the middle, drawing in the dry ingredients from the side, to make a batter. (For vata and pitta, make the pancakes with 60 g flour and 40 g quick-cooking oats and use 145 ml buttermilk.)
  3. Reheat the pan (you shouldn’t need to add any more oil). Add dessertspoonfuls of the batter to the pan (one spoonful per pancake), but space them well apart as each pancake will spread to become about 5 cm in diameter – you can probably fit five or six in a large pan. Turn the heat down a little and cook, undisturbed, until the pancakes start to look set at the base, around 1 minute. Carefully flip them over; the undersides should be golden. Cook on this side for another minute or until the bases are golden too. Place on a plate, cover and keep warm. Repeat with the remaining batter.
  4. Serve drizzled with honey if you are kapha or maple syrup if you are pitta or vata (who can also add a little butter/ghee to theirs, too).
