White French toast with walnuts

This is a lighter interpretation of eggy bread as it is made only with egg white. This is a great pitta-balancing dish as egg whites are neutral and the coconut adds the extra flavour that the egg yolks would usually provide, and it is also cooling on the body. I like to add the jaggery walnuts as I think they work really well with this dish and jaggery is full of great minerals, but you can leave them out or add plain walnuts. This is also a good dish for vata as it is warm, nourishing and light and for kapha on the odd occasion, but drizzle with honey instead of maple syrup and sprinkle with pumpkin seeds instead of the walnuts.

Ingredients

2 egg whites, whisked
1 1/2 teaspoons raw cane sugar
2 slices medium–thick bread of your choice
1 1/2 tablespoons desiccated coconut
2 teaspoons vegetable oil
maple syrup, to serve

Jaggery walnuts (optional)

20g jaggery, grated
2 tablespoons water
12 walnut halves

Method

  1. For the walnuts, add the grated jaggery to a small saucepan with the water. Bring to a simmer and once the jaggery has dissolved, leave to bubble away for about a minute or until glossy. Stir in the walnuts and coat well in the sugar. Take out with an oiled spoon and place on an oiled plate. They will cool and firm up in around 8 minutes.
  2. Whisk the egg whites with the sugar until well broken up. Pour into a shallow dish and soak the bread in the mixture, then dredge in the coconut so that both sides have a good coating.
  3. Heat the oil in a non-stick frying pan. Add the bread and cook over a moderate to low heat until golden and crisp on both sides, about 1–2 minutes per side. Some of the coconut will come off but you can simply sprinkle it over the top of the cooked bread.
  4. Slice on the diagonal and serve drizzled with maple syrup and sprinkled with the walnuts.
