Stir-fried chicken with beans and peanuts

This is a full-flavoured South Indian-inspired dish which balances kapha and decreases vata. The spices aid digestion of the chicken, but if the spices and peanuts make it too heating for a pitta imbalance use cumin seeds instead of mustard seeds and add pine nuts or pumpkin seeds instead of peanuts. Serve with spelt rotis, rice or as it is for a light meal.

Ingredients

Quantity Ingredient
1 1/2-2 1/2 tablespoons vegetable oil, (vata use 2 1⁄2 tablespoons)
1/2 teaspoon brown mustard seeds
8 large curry leaves
1 small red onion, peeled and thinly sliced
1 green chilli, pierced with the tip of a knife, (kapha only)
1 1/4 teaspoons ginger paste
3 garlic cloves, peeled and made into a paste
salt
1/4 teaspoon freshly ground black pepper
3 chicken breasts, skinned, cut into 2.5 cm cubes
150g fine green beans, sliced into long strips diagonally
1-2 tablespoons roasted peanuts, roughly powdered, (kapha only use 1 tablespoon)
3/4 teaspoon garam masala
1/2 teaspoon dry mango powder, to taste
or 1/2 teaspoon pomegranate powder, to taste
lemon juice, to taste

Method

  1. Heat the oil in a small non-stick pan. Add the mustard seeds. Once they pop, add the curry leaves, onion and chilli. Stir-fry over a high heat for 1–2 minutes. Lower the heat, add the ginger, garlic and salt, stir-fry for 30–40 seconds or until the garlic smells cooked.
  2. Add the chicken pieces, brown well over a moderate heat and add a splash of water. Cook, covered, for 2 minutes. Add the beans and cook, stirring often, until cooked through, around 3 minutes. Check that the chicken is cooked through, then add the peanuts, pepper, garam masala and mango powder or lemon juice. If the pan is looking dry, add a splash of hot water from the kettle and serve.
