Steam-baked fish with mint, coriander and coconut

This is a really easy way to cook fish and both the coriander and mint are fantastic herbs to help us digest this protein. The coconut is wonderfully cooling so this is a great dish for pitta in particular but also good for vata, who can add a little freshly ground black pepper to give the dish a little kick. The cooling coconut makes it a little cold and heavy for those with a kapha imbalance, but when you feel more in balance it is definitely worth a try. Serve with steamed rice and a suitable vegetable.

Ingredients

2 firm white fish fillets
1/2 teaspoon ghee, (optional)
lime wedges, to serve

Herb paste

Quantity Ingredient
40g creamed coconut
8g fresh mint leaves
18g fresh coriander leaves and stalks
1 1/2-1 3/4 teaspoons lime or lemon juice
1 small garlic clove, peeled
1/2 teaspoon ground coriander
1/3 teaspoon ground cumin
good pinch sugar
salt, to taste

Method

  1. Blend together all the ingredients for the paste, adding 5–6 tablespoons water until you have a fine purée. Taste and adjust the seasoning (over-season slightly as the fish will draw out the salt).
  2. Cut out two large squares of strong aluminium foil. Place the fish in the middle of the double layer of foil, skin side down, and spread the paste over the top and the ghee on top of the paste (if using). Wrap up the fish parcel so no steam can escape (I fold in the edges a couple of times all the way round). Leave to marinate for 15 minutes while you heat the oven to 180ºC.
  3. Bake for 12–14 minutes, or until the fish is cooked. Remove the skin from the fish and serve with a lime wedge.
