This is a delicious salad, full of wonderful flavours and textures. It’s a great salad for pitta, but also good for vata in the summer and ideally at lunchtime when your digestion is at its best. Those with a vata imbalance can also serve this salad warm by sautéing the fennel and warming the broad beans. This salad is a little heavy for those with a kapha imbalance but would be suitable for a summer lunch without the avocado.

Ingredients

Quantity Ingredient
2 small chicken breasts, skinned
2 teaspoons vegetable oil
1 glasshouse lettuce or other soft lettuce, washed and dried
1/2 small avocado, peeled, stoned and cut into small pieces, (kapha should omit this)
40g broad beans, shelled and cooked
1 small fennel bulb, trimmed and finely sliced or shaved
salt and freshly ground black pepper

Creamy tarragon dressing

Quantity Ingredient
2 tablespoons lemon juice
1 1/2 tablespoons vegetable oil
2 tablespoons water
1/2 teaspoon raw cane sugar
1/2 garlic clove, peeled and grated
2 tablespoons pine nuts, (those with a kapha imbalance may want to use half)
2 sprigs fresh tarragon, leaves only

Method

  1. Preheat the oven to 180ºC.
  2. Season the chicken on both sides and cut three or four diagonal slashes through the thick parts of the breast. Heat the oil in an ovenproof pan and sear the breasts for 1–2 minutes on each side or until well coloured, then transfer to the oven to cook the chicken through, around 10–12 minutes. Check that the chicken is cooked through by piercing the thicker parts of the meat with the tip of a knife – the juices should run clear rather than pink.
  3. To make the dressing, blend together all the ingredients except the tarragon until smooth, then season and stir in the tarragon.
  4. Mix together the ingredients for the salad. Slice the cooked chicken thinly on the diagonal. Place the chicken on the salad, drizzle over the dressing, toss and serve.
