This pea soup is light and simple, but vibrant. It is great for all doshas but particularly good for pitta. I don’t cook this soup with stock as I feel it would overpower the simple flavours, but you can add it if you wish. The pumpkin seed and mint pesto is wonderful and goes really well with the peas. Those with a strong kapha imbalance may want to leave out the pumpkin seed and mint pesto and simply blend 20g of the pumpkin seeds into the soup instead. You can make this soup with defrosted frozen peas. Serve as it is or with some bread.

Ingredients

Quantity Ingredient
1 tablespoons ghee or butter
1/2 teaspoon cumin seeds
1 small–medium onion, peeled and finely sliced
3 fat garlic cloves, peeled and roughly chopped
500g fresh green peas, shelled
salt
1 teaspoon sugar
850ml water
4g fresh mint leaves

Pumpkin seed pesto

Quantity Ingredient
2g fresh mint leaves
1 1/2 tablespoons extra virgin olive oil
40g pumpkin seeds

Method

  1. Heat the ghee or butter in a large non-stick saucepan. Add the cumin seeds and cook gently for 20 seconds. Add the onion and cook until soft, then stir in the garlic and cook, stirring, for 40 seconds. Add the peas, salt, sugar and water, bring to a boil and cook, covered, for 10–15 minutes or until the peas are soft.
  2. Add the mint and blend to a smooth soup. Return to the heat, adjust the seasoning and the consistency, adding a little more water or cooking at a high heat for a few minutes to reduce, until the soup is creamy.
  3. For the pesto, pound together the mint and oil until smooth, then coarsely pound the pumpkin seeds into the pesto. Pour the soup into bowls, stir in a spoonful of pesto and serve.
