Quick carrot salad

You can put this together in an instant, and it’s great for cleansing the palate during a rich meal.

Ingredients

Quantity Ingredient
2 teaspoons dry roasted peanuts
2 large carrots, peeled and coarsely grated
salt, to taste
1/2 teaspoon sugar
1 3/4 teaspoons lemon juice, or to taste
small fistful chopped fresh coriander leaves
1 tablespoon vegetable oil
1 teaspoon brown mustard seeds

Method

  1. Coarsely grind the peanuts in a good mortar and pestle.
  2. Toss the grated carrots with the ground peanuts, salt, sugar, lemon juice and chopped coriander.
  3. Heat the oil in your smallest pan until hot. Add the mustard seeds and cover, as they will splutter. As they reduce their spluttering, pour them over the salad and toss to mix well. Taste, adjust the seasoning and serve.
