Classic cucumber and mint raita

A lovely, refreshing raita that is really versatile, lovely with Indian food, great with grilled meals and very refreshing just with some naan or pitta bread.

Ingredients

Quantity Ingredient
1 teaspoon cumin seeds
200g cucumber
400g greek yogurt
salt
freshly ground black pepper
8g shredded mint leaves
small splash milk, (optional)
pinch sugar, (optional)

Method

  1. Place the cumin seeds in a small dry frying pan over a medium heat and stir just until they turn a shade darker and smell aromatic. Remove and grind to a powder in a mortar and pestle or a spice grinder.
  2. Grate the cucumber on the coarse side of a box grater. Squeeze out all the excess water and place the cucumber in a large bowl.
  3. Add three-quarters of the cumin and all the remaining ingredients except the milk or sugar and stir well to mix. Taste and adjust the seasoning, adding the milk or sugar if the raita tastes too sour for you. Sprinkle over the remaining cumin and serve chilled.
