A really delicious seasoning for those who like heat and flavour. I highly recommend it on the Maharashtra’s Ultimate Potato Burger. This can be kept in the fridge for weeks.

Ingredients

Quantity Ingredient
1 teaspoon vegetable oil
1-3 dried chillies or chilli powder, to taste
7 large garlic cloves, peeled
2 rounded tablespoons desiccated coconut
salt
2 tablespoons roasted peanuts

Method

  1. Heat the oil in a small pan. Add the chillies and, once they darken a little, add the garlic and cook for 1 minute or until just lightly coloured on all sides. Add the coconut and a little salt. Stir until the coconut is golden.
  2. Pour into a good mortar and pestle (or grinder), with the peanuts, and pound to a fine powder. Season to taste.
