Spinach and garlic raita

I have have been eating garlic-flavoured Greek yogurt with my food ever since I visited Greece years ago. Add as much or as little garlic as you like, or to suit what you are eating it with (spiced meats can take more than vegetables).

Ingredients

Quantity Ingredient
75g baby spinach
450g greek yogurt
salt
lots freshly ground black pepper
1/2-1 garlic clove, finely grated, to taste
1/2-3/4 teaspoon roast and ground cumin seeds

Method

  1. Place the spinach in a saucepan with 2–3 tablespoons of water and cook until soft, 1–2 minutes. Drain and squeeze out the excess water.
  2. Stir the spinach into the yogurt with the salt, pepper, garlic and cumin. Serve chilled.

Roast and ground cumin seeds

  • Place the cumin seeds in a small dry frying pan over a medium heat and stir just until they turn a shade darker and smell aromatic. Remove and grind to a powder in a mortar or pestle or a spice grinder.
