Tomato, onion and cucumber raita

One of our favourite raitas and among those we probably eat the most at home. It is refreshing, crunchy and flavourful.

Ingredients

Quantity Ingredient
1 ripe tomato, chopped into 1cm dice
1/4 red onion, finely chopped
90g cucumber, diced the same size as the tomatoes
large handful chopped coriander
3/4-1 teaspoon roast and gound cumin seeds
450g plain yogurt, whisked until smooth
good pinch sugar, or to taste
salt
freshly ground black pepper

Method

  1. Stir all the ingredients together and season to taste. Add more sugar if your yogurt was particularly sour.

Roast and ground cumin seeds

  • Place the cumin seeds in a small dry frying pan over a medium heat and stir just until they turn a shade darker and smell aromatic. Remove and grind to a powder in a mortar or pestle or a spice grinder.
