This is a quick and easy pilaff. Usually I add whole spices as it is, at heart, a spiced rice dish, but I realised it is better to encourage people to cook my food with a little compromise rather than not at all. So here is the result – a simple pilaff made with powdered spices.

Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 small onion, peeled and thinly sliced
1 teaspoon garam masala
salt, to taste
200g basmati or long-grain white rice, washed and soaked for 30 minutes
100g frozen peas
375ml water
1-2 tablespoons lemon juice, or to taste

Method

  1. Heat the oil in a large non-stick saucepan. Add the cumin seeds and cook for about 30 seconds until fragrant. Add the onion and saute for about 6 minutes until lightly caramelised. Add the garam masala and salt and cook, stirring, for another 20 seconds.
  2. Stir in the drained rice and frozen peas, then add the water. Taste for seasoning. Bring to a boil, then cook, covered, on the lowest heat for 10 minutes. Check that the grains are tender; if not, leave to steam for another 2 minutes. Then remove the lid and allow any moisture to evaporate. Drizzle over the lemon juice and gently mix in with a fork, fluffing up the grains.
