This drink is creamy and fruity; it is the pure essence of mango. The Indian mango season spans the English summer and the king of the mango is the Alphonso – if you can find it, this is the one to buy. You can tell when it is ripe by its soft, yielding flesh and a sweet aroma. I have given approximate quantities as mangoes differ in size and sweetness so add and taste as you go along until you are happy. Chill the smoothies well before serving.

Ingredients

Quantity Ingredient
2 alphonso mangoes
300ml milk
2 tablespoons sugar, or to taste
lots ice cubes, to serve

Method

  1. Standing the mango upright with the narrow end towards you, slice off both cheeks on the either side of the stone. Slice these in half lengthwise and remove the skin by peeling or slicing. Slice off the remaining sides of the stone as much as possible. Repeat with the second mango and put all the flesh and juices in a blender.
  2. Add the milk and sugar and blend to a thick, smooth mass. Pour into glasses, each filled with ice cubes, and serve chilled.
