Nothing speaks of the British summer quite like strawberries. It’s the time when they are at their best – plump, sweet and juicy. And whenever the sun starts shining and the temperatures start to rise, the Indian in me craves a lassi. This is the drink that is taken in the rural areas by the farmers to help cool them down when working in their fields under a hot sun. It is traditionally made with buttermilk (the thin, slightly sour liquid that is the by-product of making butter) but it is much more convenient to cheat by using thinned-down plain yoghurt.

Ingredients

Quantity Ingredient
200g ripe strawberries
200ml good-quality fresh plain yoghurt
1 1/2-2 tablespoons sugar, or to taste
ice cubes, to serve

Method

  1. Blend the strawberries, yoghurt and sugar together until frothy. Pour into glasses and serve with the ice.
