Tomato, cucumber and onion raita

This is one of the most common raitas and the different textures and flavours make it a great accompaniment to any meal. Eat it as it is or serve it as a cooling summer dip with crudites or naan wedges.

Ingredients

Quantity Ingredient
1 tomato, diced
1 small red onion, peeled and diced
12.5cm piece of cucumber, peeled and diced
2 tablespoons fresh chopped coriander leaves and stalks
400ml plain yoghurt
salt and freshly ground black pepper, to taste
1/2-3/4 teaspoon roasted cumin powder
1/4 teaspoon red chilli powder

Method

  1. Mix together the vegetables, coriander and yoghurt. Season with salt, plenty of black pepper and the roasted cumin powder.
  2. Tip into a serving bowl, sprinkle over the chilli powder and serve.
