I love salads and although in India we use different salad ingredients and don’t often make a dressing, salads are always present on a well-laid Indian table to provide extra crunch to a meal. They are generally dressed with a squeeze of lemon juice and a light sprinkling of salt and chilli powder. This spinach salad is slightly different and is great with any meal, but it’s really designed to be served alongside tandoori dishes.

Ingredients

Quantity Ingredient
3 handfuls baby spinach leaves
1/2 shallot, peeled and sliced
1 tomato, sliced into thin wedges

Dressing

Quantity Ingredient
2 heaped tablespoons roasted peanuts
20g fresh coriander, leaves and stalks
10g fresh mint leaves
salt, to taste
1/4 teaspoon cumin
1/8 teaspoon garlic paste
1/8 teaspoon ginger paste
2-3 teaspoons lemon juice, or to taste
3-4 tablespoons vegetable oil, such as groundnut oil

Method

  1. Blend together all the ingredients for the dressing until well mixed. Lightly toss the spinach leaves, sliced shallot and tomato in the dressing and serve.
