I very rarely deep-fry anything as I think there are other ways of enjoying the same ingredient in a healthier way. However, these unusual potatoes really are worth enjoying in their pure, unadulterated state. They hail from the Sindhi community and are really quick and fun to make. They are a fantastic accompaniment to barbecues, burgers and any outdoor meals. The dish works best with smallish, red-skinned potatoes as they don’t break up when pressed. Alternatively, you can fry up large potato wedges and toss them in the spices.

Ingredients

Quantity Ingredient
vegetable oil, for frying
600g medium-sized red-skinned potatoes, peeled and halved lengthwise
salt, to taste
1/2 teaspoon dried mango powder
1/4-1/2 teaspoon red chilli powder
1/2 teaspoon coriander powder

Method

  1. Heat vegetable oil to a depth of 7.5cm in a wide saucepan or wok. Toss the potatoes with a little salt to season and add to the oil. Fry over a low heat for about 15 minutes, turning occasionally, until they are soft in the centre when tested with the point of a sharp knife. They will still be pale in colour.
  2. Remove from the oil with a slotted spoon and leave to drain on a plate lined with kitchen paper for 5 minutes. Then, using your fingers, lightly flatten the potatoes.
  3. To serve, reheat the oil in the pan, add the flattened potatoes and fry them over a low heat for about 5–6 minutes until they are golden and crisp. Remove and drain on kitchen paper once again and sprinkle a little of each of the spices over the top. Check seasoning and add extra, if necessary. Top each potato with a drop or two of oil to set the powdery spices and serve.
