This is the quickest side dish you can make. It makes a punchy accompaniment to any dish, even plain layered breads. It is not a full vegetable dish but adds a burst of flavour, colour and texture to anything within minutes.

Ingredients

Quantity Ingredient
1 tablespoon vegetable oil
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
pinch red chilli powder
bunch spring onion, preferably thin ones, washed and sliced into small rounds, around 5–7.5mm long
salt, to taste

Method

  1. Heat the oil in a small non-stick saucepan. Add the cumin seeds and fry until lightly coloured and fragrant. Add the rest of the spices, stir-fry for just 5–10 seconds, then add the spring onions. Turn the heat up and stir-fry for 1 minute – they should still remain crunchy. Taste and adjust the seasoning and serve straightaway.
