A delightful salad with tart pink grapefruit and smooth avocado, topped with rocket leaves.

Ingredients

Quantity Ingredient
2 teaspoons mild vinegar
1 teaspoon honey
1 shallot, finely chopped
sea salt and freshly ground black pepper
2 tablespoons olive oil
1 pink grapefruit
2 avocados
a small handful rocket leaves

Method

  1. Combine the vinegar, honey, shallot, salt, pepper and olive oil in a small bowl. Peel and segment the grapefruit, making sure you remove all the bitter white pith.
  2. Halve the avocados and remove the stones, then cut them into fairly thick slices. Arrange the grapefruit and avocado on a plate, pour over the dressing and scatter the rocket leaves on top.
