Avocado salsa with prawns and lime

Serve this flavourful salsa with tortilla chips, or as canapés on toasted white bread rubbed with half a garlic clove. Nice nibbles for a party.

Ingredients

Quantity Ingredient
500g cooked prawns, unpeeled
1/2-1 mild red or green chilli
2 spring onions
a handful fresh coriander leaves
2 avocados
2 tablespoons fresh lime juice
A pinch sea salt
freshly ground black pepper

Method

  1. Peel and roughly chop the prawns, then set them aside. Halve, deseed and finely chop the chilli. Shred the spring onions and chop the coriander. Cut the avocados in half, remove the stones and then dice the flesh. Combine the diced avocado with the lime juice, prawns, chilli and spring onions, then season to taste with the sea salt and a bit of black pepper. Add the chopped coriander and serve.
