A freshly made guacamole is great with barbecued meats, tortilla chips or crusty bread.

Ingredients

Quantity Ingredient
1/2-1 see method for ingredients, (optional)
1 medium tomato
1/2 medium red onion
2 avocados
1-2 tablespoons fresh lime juice
A pinch sea salt
1 garlic clove, minced, (optional)
4 tablespoons fresh coriander leaves, chopped

Method

  1. Slice the chilli lengthwise and carefully remove the seeds, then finely chop with a sharp knife. Finely chop the tomato. Peel and finely chop the onion.
  2. Halve the avocados and remove the stones, then scoop out the flesh straight into a bowl. Add the lime juice and sprinkle with salt. Mash the avocado with a fork, then add the finely chopped ingredients. Add the garlic, if using, then fold in the coriander. Taste, and adjust the seasoning if necessary.
