Nobis salad with croutons and roasted Parma ham

Roasting wafer-thin slices of Parma ham makes them crisp and simply exquisite – a perfect addition to this lettuce and avocado salad.

Method

  1. Start by making the Nobis dressing, and then make some croutons (or use store-bought). Use 2-3 slices of Parma ham per person. Line a baking tray with baking paper and then spread out the ham slices on the tray. Bake the ham at 190°C for about 8 minutes, or until crisp. This can be prepared ahead of time.
  2. Arrange fresh, tender lettuce leaves (rinsed and carefully dried or spun in a salad spinner) in a wide salad bowl. Place large cubes of avocado on top and spoon over the dressing.
  3. Break the crisp Parma ham into pieces and sprinkle them over the salad. Finally add a handful of small croutons and garnish with chives. Serve the salad at once.
