Avocado and celery is a nice, somewhat unusual combination, teamed here in a tangy salad.

Method

  1. Wash and trim half a head of celery. Cut off the finest top leaves and set them aside.
  2. Slice the celery stalks and place them in a bowl. Halve 2 avocados and remove the stones, then dice the flesh and add to the bowl.
  3. Squeeze the juice of 1 small lemon over the salad and add a splash of mild olive oil. Season with sea salt and freshly ground black pepper, and carefully toss to combine. Garnish with the reserved celery leaves.
