This dipping sauce is a Vietnamese classic, and goes beautifully with fish cakes, spring rolls or other Asian-inspired finger food.

Ingredients

Quantity Ingredient
1 garlic clove, minced or chopped
1/4 fresh red chilli, finely sliced
or 1 small bird’s eye chilli
2 teaspoons rice vinegar
2 tablespoons fish sauce
3 tablespoons fresh lime juice
1 tablespoon caster sugar
or 2 teaspoons grated palm sugar
2 tablespoons water
a few fresh mint leaves, finely chopped
finely julienned carrot
or finely diced cucumber

Method

  1. Combine the garlic, chilli, vinegar, fish sauce, lime juice and sugar in a bowl, making sure the sugar dissolves properly. Add the water, finely chopped mint and the julienned carrot or a little diced cucumber.
