Sautéed small green chillies, pimientos de Padrón, are simply divine as little tapas. It’s a bit of a gamble though; most of the Padrón chillies are mildly hot, but once in a while a really hot one comes along…

Ingredients

Method

  1. Gently heat a thin layer of olive oil in a frying pan over medium heat. Add the whole Padrón chillies (or other mildly hot chillies) and sauté while stirring for 6-7 minutes, or until they are soft and start to blister. Sprinkle generously with sea salt flakes and serve while still warm.
