These moist, very chocolatey brownies are perfect when you have lots of guests, or want to make them beforehand and freeze. We like to make quite small squares, as the brownies are fairly sweet.

Ingredients

Quantity Ingredient
200g butter
150g dark chocolate
4 medium eggs
290g caster sugar
1-2 teaspoons vanilla paste
120g plain flour
1 teaspoon baking powder
2 tablespoons sifted cocoa
100g walnuts, roughly chopped, (optional)

Method

  1. Start by generously greasing and lightly flouring the sides of a baking tin, measuring about 30 x 24 cm. Line with non-stick baking paper and set it aside.
  2. Melt the butter over low heat and then move the saucepan to a wooden chopping board to keep it warm. Break the chocolate into pieces and let them melt in the warm butter.
  3. Meanwhile, preheat the oven to 175°C. Whisk the eggs and sugar until fluffy, and add the vanilla. Fold in the flour mixed with the baking powder and sifted cocoa. Fold the melted chocolate butter into the egg and flour mixture and stir in the walnuts, if using. Spread out the mixture in the baking tin.
  4. Bake for about 30 minutes. Watch the brownies towards the end so that they don’t overbake and become dry. Allow to cool and then leave for a few hours, or preferably until the following day. Cut the brownies into 5 cm squares.
