White chocolate panna cotta

A delectable panna cotta with white chocolate that we like to top with tangy lime-marinated strawberries or blueberries, or with plain, freshly picked raspberries.

Ingredients

Quantity Ingredient
3 gelatine leaves
100g white chocolate
200ml pure cream
200ml full-fat milk
2 tablespoons caster sugar

Topping

Quantity Ingredient
Lime-marinated berries
or or other berries
fresh mint leaves
icing sugar, sifted, for dusting (optional)

Method

  1. Soak the gelatine leaves in cold water for at least 5 minutes. Break the chocolate into large pieces and roughly chop them with a sharp knife.
  2. Bring the cream, milk and sugar to the boil in a saucepan, take the saucepan off the heat and add the chopped chocolate. Let stand for a few minutes while the chocolate melts, stirring a couple of times.
  3. Remove the gelatine leaves. Squeeze them gently with your hand, add them to the warm creamy milk mixture and stir.
  4. Arrange small glasses on a tray, fill them with the mixture and chill until the panna cotta sets.
  5. To serve, garnish with sliced lime-marinated strawberries and a few fresh mint leaves, or top with other summer berries and dust with a bit of sifted icing sugar.
