This is an easy recipe for lemon chicken in a pot, inspired by a trip to northern Italy.

  1. Brown chicken pieces in some olive oil and butter until nicely coloured. Season with salt and pepper. Transfer the pieces to an ovenproof dish. Add some leek sliced on the diagonal, tender zucchini in pieces, a few lemon wedges (the lemon must be really ripe and yellow, or it may taste bitter) and a handful of whole, lightly bruised garlic cloves. Drizzle with a little olive oil, pour in 200 ml chicken stock and 4-5 tablespoons white wine mixed with a trickle of honey. Put a few sprigs of fresh lemon thyme or regular thyme in between the vegetables. Bake at 200°C for about 30 minutes, or until cooked through. Serve with a green salad, potatoes or a plain risotto.
