Sunny citrus salad

In the wintertime, this colourful and sunny salad lifts your spirits. Choose nice, juicy citrus fruits, and simply top with fresh mint leaves, rocket, baby spinach or a little fresh coriander.

Ingredients

Quantity Ingredient
2 sweet oranges
1 pink grapefruit
2 tangerines
or 1 blood orange
1/2 red onion, thinly sliced
sea salt flakes
freshly ground black pepper

Dressing

Quantity Ingredient
1 tablespoon red wine vinegar
1 teaspoon honey
3 tablespoons mild olive oil

Method

  1. Combine the ingredients for the dressing. Peel the citrus fruits with a sharp knife, removing all the bitter white pith. Cut the fruit into slices and arrange them on a platter. Top with the thinly sliced onion and sprinkle with sea salt. Spoon over the dressing, grind a bit of black pepper on top and scatter with a few mint leaves or other leaves of your choice.
