Fresh and tangy citrus fruits dressed in vanilla-scented syrup.

Ingredients

Method

  1. Bring 150 ml water to the boil with ¼ vanilla pod and 3-4 tablespoons sugar. Simmer the syrup, uncovered, for about 5-6 minutes, and then flavour with a splash of fresh orange juice. Set aside to cool.
  2. Peel and cut out membrane-free segments from 2 sweet navel oranges, 1 pink or white grapefruit and perhaps a tangerine or two. Arrange the fruit in small glasses, drizzle with the syrup and garnish with fresh mint.
