Method

  1. First of all, prepare a flavourful chocolate sauce. You can make it ahead of time and then carefully reheat it.
  2. Thinly slice a few knobs of preserved ginger and then shred them very finely. Or cut the ginger knobs into very small cubes.
  3. Whip some cream. Place a few scoops of good-quality vanilla ice cream in a large bowl or in small individual bowls. Add the whipped cream and sprinkle sparingly with ginger pieces (preserved ginger can be quite sharp). Trickle either warm or cold chocolate sauce on top and serve at once.
