This is a full-flavoured and substantial soup with infinite variations. Sometimes we include potatoes or pasta, and sometimes we add only beans, vegetables and good-quality chorizo.

Ingredients

Quantity Ingredient
2 chorizos or other spicy sausages
1 medium onion, chopped
2 large carrots, sliced
1 medium parsnip, sliced
1 small zucchini, in pieces
6 large tomatoes, in chunks
2 tablespoons olive oil
1.5 litres chicken or vegetable stock
400g tinned white beans, rinsed and drained
50g spaghetti, (optional)
3 celery stalks, finely chopped
1 large garlic clove, crushed
a large handful english spinach leaves
3 tablespoons Pesto
sea salt
fresh flat-leaf parsley, for garnish
freshly ground black pepper

Method

  1. Cut the chorizo into 2 cm thick slices. Prepare all the vegetables.
  2. Heat the olive oil in a pot or saucepan over medium heat and sauté the onion and chorizo. Add the carrots, parsnip, zucchini and tomatoes. Pour in the stock, bring to the boil, cover and simmer gently for about 15 minutes. Add the white beans, spaghetti (if using), celery and garlic. Cook for another 6-7 minutes, or until the pasta is done. Stir in the pesto and add the spinach (it should only just wilt).
  3. Season to taste with salt and pepper, and serve the soup sprinkled with flat-leaf parsley.
