It’s easy to forget how appetising plain old green peas can be. This is how our Chilean aunt Marta serves them.

Ingredients

Method

  1. Cook frozen or freshly picked green peas by covering them with lightly salted cold water. Bring to the boil and cook for 2-3 minutes. Add a glass of cold water, take the pan off the heat and place it on a wooden chopping board for 5 minutes with the lid on. Drain the peas in a colander and allow to cool.
  2. Tip the peas into a serving bowl and fold in a good handful of chopped fresh coriander. Add a dash of red wine vinegar and vegetable oil, and season with mild sea salt.
