This fresh-tasting dip is delicious in pita bread with sliced grilled chicken, or as a dipping sauce for toasted pita wedges.

Ingredients

Quantity Ingredient
250g frozen baby green peas
2 tablespoons olive oil
9-10 fresh mint leaves, shredded
1-2 tablespoons fresh lemon juice
sea salt flakes

Method

  1. Bring lightly salted water to the boil in a saucepan and boil the peas for 3 minutes (or follow the instructions on the packet). Pour them into a colander and rinse immediately with cold water.
  2. Mix the peas using a hand-held blender or food processor. Add the olive oil and mint. Mix until more or less smooth, and season with lemon juice and sea salt to taste.
