We often make a tzatziki, the refreshing Greek yoghurt sauce, with snipped dill instead of fresh mint. Tzatziki is a splendid side dish on a buffet or barbecue, or simply served with crusty bread and black olives.

Ingredients

Quantity Ingredient
1 medium cucumber
1/2-1 teaspoon salt
400g thick greek yoghurt
1 garlic clove, crushed
A pinch freshly ground black pepper
1 tablespoon olive oil, plus extra to serve
4 tablespoons fresh dill, snipped

Method

  1. Rinse, peel and coarsely grate the cucumber. Place the cucumber in a sieve, sprinkle with the salt and combine. Set aside to drain for about 20 minutes, and then use your hand to squeeze the liquid out of the grated cucumber.
  2. Place the cucumber in a bowl. Combine with the yoghurt, garlic, pepper, olive oil and most of the dill. Allow the flavours to develop for an hour or so, then drizzle with a little extra olive oil and sprinkle with the reserved dill before serving.
